Did I ever mention - that I LOVEEEEEEEEEEE summer time?

Wahhh Hooo - Shut the front door -- I am so glad to be outside, inside with doors & windows open, trying to think of dinners that are "light", and oddles of extra energy!

I will probably be missing in action a bit thru the summer months. Or at least, until it gets so hot you can't even breathe ;)

This past holiday weekend was great around here - I made Chocolate Eclair Pie (ever had one? They are easy to make and even if you don't like eclairs, you'll love this summertime dessert) let me know and I'll post the recipe - heck, don't even ask - I will just post it anyway ... we swam and we swam all over the dam - until we were sunburnt - yes, we use sunblock but your skin can still feel a little crispy after 4 hours in the sun - I got my annuals planted, and the house was busy busy busy Friday, Saturday, Sun and Mon.

Gosh - I wish we would win the lottery so my hubby and son was always here ...
(I got a feeling I would probably regret saying that within a few weeks) ;)

I did get a little scrapbooking done - I am actually almost finished with this years first Christmas album! LOL
Yep I said first and I said Christmas - and I am so ready to be done with the Christmas layouts I could scream! As soon as I am done with it - I'll post some pictures - I have a cute idea in process for the front cover of the album - but don't know if it will turn out like I had pictured...in fact, if it did, it would actually be the first project EVER that turned out as expected! LOL

So - anywayyyyyyyy ---- I hope everyone else is enjoying this wonderful weather! I love summers and Fridays. I can remember saying that when I was like 11 or 12 years old -- but thats me. I have always said we run our home like our parents are away for the weekend - ;) We eat like that - we live like that - and truth be told, we even think like that - and I wouldn't change it for the world ....

Chocolate Eclair Pie Recipe --

2 boxes FRENCH VANILLA PUDDING (Instant)
(and it must be french vanilla)
3 cups cold milk (no fat free stuff! I will know if you use lowfat, 2% etc and I will come and get you!)
Graham Crackers
Canned Frosting CLASSIC CHOCOLATE
1 Tub 8 Ounces Cool Whip
(xtra creamy or regular works)

Mix together your 2 boxes of pudding and milk until it looks like a thick pudding.
Now carefully hand mix in your container of Cool Whip till well mixed
Get 9 by 13 casserole dish - line it with graham crackers on the bottom -
use 1/2 of your pudding/cool whip mix and spoon it over the graham crackers --
then put down another layer of graham crackers --
spoon in the other 1/2 of your pudding/cool whip mix --
lay down one last layer of graham crackers....

Now here is the secret ingredient ---
put your Classic Chocolate Can Frosting into the microwave on high for
about 40 to 60 seconds - pull it out - and mix it in can -
you want it to be kind of runny -
cause....
you are going to pour that entire can of melted frosting over your dish!
Yep - pour it right over the pudding and graham cracker concoction -
now throw it into the fridge (NOT freezer - fridge)

DO NOT COVER!
and let it fester overnight -
Oh my gosh this is slap your momma and kick your hubby GOOD!
Its creamy and light but satisfies that sweet tooth!

Ms. V! I was just thinking of you today and wondering how your doing and bam- you post! LOL, I love the new and improved picture of you and your son! I am so glad to hear how good you're doing! Wow Ms. V! What a fabulous video! now I will be singing this all day - not that I mind. Now if my weather would just cooperate and give me some summer I could be happy. We are 50 today, 70 yesterday, then back to 70 tomorrow and hopefully 80 by Sunday. Such crazy weather we are having, but that is typical for Utah, just seems more so the last couple of years.

i love your posts - what looking to see if you had posted anything new yesterday :) Funny, Susan said she was thinking about you too. Thanks for the recipe - sounds scrumptious!

just take a look at these comments above --- WHERE and in what other hobby would you find such great people? I bet fishing people, footballers and tennis people aren't as kind as crafters! LOL Listen just kidding there - (don't want fishers, tennis pros and sports fans writing me hate mail! LOL) ;)
