Did I ever mention - that I LOVEEEEEEEEEEE summer time?

Wahhh Hooo - Shut the front door -- I am so glad to be outside, inside with doors & windows open, trying to think of dinners that are "light", and oddles of extra energy!

I will probably be missing in action a bit thru the summer months. Or at least, until it gets so hot you can't even breathe ;)

This past holiday weekend was great around here - I made Chocolate Eclair Pie (ever had one? They are easy to make and even if you don't like eclairs, you'll love this summertime dessert) let me know and I'll post the recipe - heck, don't even ask - I will just post it anyway ... we swam and we swam all over the dam - until we were sunburnt - yes, we use sunblock but your skin can still feel a little crispy after 4 hours in the sun - I got my annuals planted, and the house was busy busy busy Friday, Saturday, Sun and Mon.

Gosh - I wish we would win the lottery so my hubby and son was always here ...
(I got a feeling I would probably regret saying that within a few weeks) ;)

I did get a little scrapbooking done - I am actually almost finished with this years first Christmas album! LOL
Yep I said first and I said Christmas - and I am so ready to be done with the Christmas layouts I could scream! As soon as I am done with it - I'll post some pictures - I have a cute idea in process for the front cover of the album - but don't know if it will turn out like I had pictured...in fact, if it did, it would actually be the first project EVER that turned out as expected! LOL

So - anywayyyyyyyy ---- I hope everyone else is enjoying this wonderful weather! I love summers and Fridays. I can remember saying that when I was like 11 or 12 years old -- but thats me. I have always said we run our home like our parents are away for the weekend - ;) We eat like that - we live like that - and truth be told, we even think like that - and I wouldn't change it for the world ....

Chocolate Eclair Pie Recipe --

2 boxes FRENCH VANILLA PUDDING (Instant)
(and it must be french vanilla)
3 cups cold milk (no fat free stuff! I will know if you use lowfat, 2% etc and I will come and get you!)
Graham Crackers
Canned Frosting CLASSIC CHOCOLATE
1 Tub 8 Ounces Cool Whip
(xtra creamy or regular works)

Mix together your 2 boxes of pudding and milk until it looks like a thick pudding.
Now carefully hand mix in your container of Cool Whip till well mixed
Get 9 by 13 casserole dish - line it with graham crackers on the bottom -
use 1/2 of your pudding/cool whip mix and spoon it over the graham crackers --
then put down another layer of graham crackers --
spoon in the other 1/2 of your pudding/cool whip mix --
lay down one last layer of graham crackers....

Now here is the secret ingredient ---
put your Classic Chocolate Can Frosting into the microwave on high for
about 40 to 60 seconds - pull it out - and mix it in can -
you want it to be kind of runny -
cause....
you are going to pour that entire can of melted frosting over your dish!
Yep - pour it right over the pudding and graham cracker concoction -
now throw it into the fridge (NOT freezer - fridge)

DO NOT COVER!
and let it fester overnight -
Oh my gosh this is slap your momma and kick your hubby GOOD!
Its creamy and light but satisfies that sweet tooth!

Today is Armed Forces Day, so again, this is a hop to support and bring awareness to the works of Operation Write Home .

OPERATION WRITE HOME sends cards to our deployed personnel in 2 different ways … today’s hop focuses on HERO MAIL - these cards will go directly to our armed forces (all branches, guys & gals). This type of card is our personal thank you to the hero.

Did you know - OWH also asks us to design cards that the service persons can send home to their families? Oh I LOVE this idea! Lets face it guys - they do not have a Wal-Mart or Hallmark they can run in at the last moment to get a greeting card for their family. And can you think of any mother, wife, sister - that deserves a birthday card or mothers day card more than a Military Wife / Mom / Sibling? What about the children of our military? How happy do you think they are seeing a card from dad or mom - specially made for them?

I have seen your designs and creations - there are some gorgeously stunning cards on the blogs I have visited...so PLEASE ... take time to send a few or create a few especially for those that are protecting us every minute of every day.

There are a few guidelines Operation Write Home will ask you to follow. Its nothing major. So please take some time to visit their site. (Link below) And listen - if you can’t create a card(s) -- donate $1...$5. Or however much you can spare. They accept Paypal and it’s a tax write off!!!

Ahhh so proud of "my boys"

Okay...so most of you probably know I am a nut...but
you will see from the picture here, that it definitely runs in the family ;)
This is my son & my grandson...
Every holiday, I normally have some kind of hat, ears or something to hang off everyone.
And believe me - they have learned its much easier to just wear the item - no matter what it is! LOL

So here is the most recent event - Easter and
I made sure we all had Hoppy Ears for EVERYONE! LOL

I am a very blessed woman ... I really am.
I mean...who does this for their mom?
We had such a good time...the bad thing?
Dad had placed my Natey in his Christmas pajamas for Easter morning!
WHO DOES THAT?!?!?
LOL

If I had known, that fashion faux paH ...
would have never happened but oh heck...
sometimes you have to pick your battles, right Moms?

I just got the biggest kick out of this batch of photos...
I had to share a few of them with you.

Now you know why I have to scrapbook ;)
